Le Diamant Noir
Eric Samson is a Brittany native who worked with Relais & Chateaux for 10 years. He then set out into various rewarding experiences, during which he obtained his first Michelin star, at the Château de Courcelles, in 2001. In 2004, Eric Samson opened his own restaurant, “L’Imaginaire”, in Dordogne and he received another Michelin star.
In 2014, Eric Samson joined the Koh-I-Nor adventure in Val Thorens and continued with Taj-I-Mah in Les Arcs.
Chef Damien Ruffier has joined Eric to become Resident Chef in your restaurants of Taj-I Mah.

The name of the restaurant refers to this ultimate noble product - the truffle - which the chiefs use from starters through to dessert: millefeuille of scallops with truffle in crust, calf sweetbread, truffle and pear, meeting between truffle, hazelnut and chocolate.
